Warm Salad of Mettwurst on Turnip StripsIngredients for 4 people
1 small turnip
1 shot of white wine
1 dash of sugar
4 smoked Mettwurst
4 cl Balsamico vinegar
2 tablespoon lard
1 teaspoon mild mustard
1 bunch of parsley
Salt and freshly grounded pepper
Peel the turnip, cut into fine strips and boil-off in a pot. Deglaze with white wine and season with butter, salt and pepper. Caramelise lightly with the sugar. Put the pot to one side.
Sauté the shallot finely cut in cubes in the lard. Cut the smoked Mettwurst in slices, add to the shallot and fry. Peel the pear, cut into fan-shape and add to the other ingredients and fry together. When the pear pieces become soft, deglaze with the Balsamico vinegar, add the mustard and season lightly with salt and pepper.
Put the turnips on a warm plate and arrange the sausage salad on it. Sprinkle with the chopped parsley.
Strong bread or fried potatoes go well with this.
